This soup was a happy accident. We had some sauteed onions and potatoes left over one day (seasoned with thyme) from making quiches and I decided to put a few scoops in a mug of chicken broth for an impromptu cup of soup. The results were incredibly delicious and now we can share it with you. Made with OWC chicken broth, local/organic yellow potatoes, local onions, expeller-pressed coconut oil (no coconut flavor), organic dried thyme, and Himalayan pink salt.
